I love having these pancakes for my Sunday breakfast or brunch. Served here with coconut yoghurt, poached pears, blueberry sauce, chopped activated nuts, and a drizzle of maple syrup.
The pancakes are so easy to make and this meal provides a good variety of fibre for the gut microbes, protein and healthy fats, vitamins, minerals and antioxidants.
*Replace the pears with banana if following a low FODMAP diet.
Serves 2
1 cup Buckwheat flour (I made my own from blending whole buckwheat groats)
1 tsp baking powder
1 organic egg
120ml unsweetened almond or oat milk
Butter or coconut oil, for cooking
1 pear, diced and lightly poached (or 1 banana)
1 packet organic blueberries
Handful activated nuts
Mix the first two ingredients together then beat in the egg and add the milk gradually until you have a smooth batter. Alternatively add in the flax 'egg' at this stage (see below).
Melt some butter or coconut oil in a pan and pour in enough milk for your pancake. Cook on both sides until browned. Add your toppings and enjoy!
* You can replace the egg with 1 tablespoon of ground flaxseed (mixed to a paste with a little water and allowed to gel) for a vegan alternative 🌱
I made the blueberry sauce by adding the whole packet to a small saucepan with a splash of water. Heat up and mash well, until they are the desired consistency. This compote keeps well refrigerated, if you don't eat it all.
The recipe can be made gluten-free, dairy-free, refined sugar-free, and low in FODMAPs, so it's perfect for those of you with food sensitivities or a sensitive digestive system.
